I have been wanting to make a gazpacho cold soup. I hate tomato soup!!!

My idea was to add something sweet to help reduce the acidity and make

it less tomatoey (is that a real word??) Lol.... I started out by chopping garlic,

sweet onion, jalepeno, cucumber, plum tomato, beefsteak tomato and watermelon!

After all of the prepping, I add Trader Joe's low sodium garden veggie juice and

olive oil. The last thing is a pinch of dried basil, cayenne pepper and black pepper.

Yum!!!  What a refreshing snack, dinner compliment or lunch (serve it with sliced avocado)
